DESCRIPTION:Join Meat Free Mondays Waiheke this Easter for a low-carbon\, plant-based taste of Ukrainian food and culture with Simon Paul. \n\nMoved by the plight of Ukrainians gripped by war with Russia\, Simon has put his own safety at risk to travel to the country three times over the past three years\, helping in any way he can. This has taken many forms\, from volunteering for the Red Cross in No Man’s Land\, to pushing beds in hospitals\, to plumbing and handyman jobs. In the process\, he’s experienced first-hand the warmth\, generosity and richness of Ukrainian culture\, learning the language and customs – as well as some of their traditional recipes.\n\n\n\n\n\nSimon has created a menu for us comprised of simple\, wholesome dishes that are quintessentially Ukrainian:\n\n\n\n\n\nBorsch\n\n\nThe vibrant beetroot soup\, packed with vegetables and served with sour cream\, that is considered a vital\, historically rooted symbol of Ukrainian culture – so much so that Unesco recognised it on its list of intangible cultural heritage in need of protection.\n\n\n\nHalušky\n\n\nThese little potato dumplings are a bit like Ukrainian gnocchi. First boiled\, then pan-fried with mushrooms\, onions and other tasty ingredients\, they’re the ultimate comfort food.\n\n\n\nSunflower Halva\n\n\nYou may have tried the Middle Eastern version of this delicious sweet – in Ukraine they make it with sunflower instead of sesame seeds.\n\n\n\nApricot Kompot\n\n\nKompot is a staple beverage in Ukraine\, made by simmering fruits in water with a little sugar.
